The acid of lemon or lime likely:

  • brightens garlic so it tastes more alive rather than heavy

  • lifts parmesan, making it feel sharper and saltier with less added

  • cuts through earthiness in greens or bitterness in other things

  • wakes up red pepper flakes or anything spicy, making them feel warmer and more present

Sometimes it's about waking up and opening our palates to what is already present.
